Slow Cooker Lentil Soup

Hearty winter soup.
Ingredients
- 1/2 cup Lentils, Brown, Organic
- 1 tbsp Certified Organic Canola Oil
- 78 g Organic Carrots
- 2 stalk celery, raw
- 1 cup Onions
- 1 tsp Lemon Zest
- 1/2 tsp Cumin Seed
- 3 cups Organic Vegetable Broth, Low Sodium
- 2 1/2 cups Baby Spinach
- 1/2 cup Potato, Red
- 1 tsp Garlic
Directions
Heat up the oil in a skillet.
Add the Onion, carrot and celery and cook for 5 minutes until tender.
Stir in the cumin seeds, lemon zest and garlic.
Pour into crock pot.
Set on low for 8-10 hours.
Add in spinach. Turn up to high and serve once boiling.
