Col's Slow Cooker Stifado

Beef stew with tomatoes, spices and feta
Ingredients
- 1 4/5 lb Wegman's Organic Grass Fed Chuck Roast
- 2 tbsp Extra Virgin Olive Oil
- 1/4 cup All Purpose Flour (fyfga)
- 12 oz Gold Pearl Onions
- 28 oz crushed tomatoes
- 4 oz red wine
- 1/4 cup Beef Flavored Culinary Stock
- 12 oz Extra Broad Egg Noodles
- 1/4 cup Traditional Crumbled Feta Cheese
Directions
Cube meat, and toss in flour. Brown deeply in olive oil and place in crockpot (do this in batches, if necessary). In the same sauce pan, saute the pear onions over high heat, then deglaze the pan with the wine and beef stock. Pour over the meat in the crockpot. Top with the crushed tomatoes. In a bouquet garni bag, place a cinnamon sticks, 6 whole cloves, four anise seeds, two basil leaves and 4 cloves of garlic (peeled and crushed). Nestle in the center of the crockpot, and cook on low for 6-7 hours. Remove the bouquet garni bag before serving over noodles and topping with feta cheese.
