Cheesy Smashed Potato Soup

Thick, creamy potato soup with sharp cheddar cheese.
Ingredients
- 3 1/2 cups Fat Free Skim Milk
- 3 tbsp All-purpose Flour
- 2 tbsp Smart Balance Light
- 1 cup Onions
- 4 average potato
- 1 1/2 tsp Salt*
- 1/4 tsp Pepper, Black
- 1/8 tsp Pepper, Red Or Cayenne
- 1 1/4 cups Sharp Cheddar Reduced Fat Cheese
- 1/3 cup Light Sour Cream
- 1/2 cup Green Onion
Directions
Beat 1/2 cup milk with flour until smooth.
Melt margarine in Dutch oven over medium heat.
Cook onions in margarine about 3 minutes, until tender.
Increase to high heat. Stir in remaining 3 cups milk. Add potatoes (cubed 1/4"), salt, black pepper, and cayenne pepper.
Heat to boiling, reduce heat, simmer for 15-18 minutes until potatoes are tender.
Beat in flour mixture with whisk. Cook about 2 minutes, stirring frequently, then remove from heat.
Beat mixture until potatoes are slightly mashed.
Stir in sour cream, cheese, and green onions (or top with onions).
