Smoked Beef Sausage with Noodles

Beef Sausage with Noodles, Peppers, and Low-Fat Mozzarella.
Ingredients
- 14 oz Beef Smoked Sausage
- 1 medium Yellow Onions
- 1 Red Bell Pepper (large)
- 1 cup Orange Bell Pepper
- 1 cup Yellow Bell Pepper
- 8 oz Penne Rigati (whole Wheat)
- 1/2 pkg Low-moisture-part Skim Mozzarella Cheese
- 2 tbsp Extra Light Olive Oil
Directions
Pour the two tbsp of olive oil into the frying pan. Dice the onion and sautee with some garlic and salt until they are soft and translucent. While the onions are cooking down, slice the sausage into thin strips, and cut the peppers into thin strips as well. Boil the water while the onions cook as well. Once the water is boiling, pour in the penne and set the timer for eight-minutes (whole wheat variety only, and one minute less than the directions call for being done. Adjust cooking time for different varieties). Sautee the sausage with the onions and some red pepper flakes or hot sauce for five minutes. After five minutes toss in the pepper strips and cook for three minutes. Once the noodles are nearly done, drain them and toss them in the pan with the sausage, onions, and pepper. Toss to combine and then coat with the mozzarella. Serve immediately.
