So Much Citrus Salad

While commonly used in cooking, citrus fruits retain their health value best when eaten raw. Grapefruit is a well-known metabolism booster (it’s basically the quintessential diet food), but lemons and limes are also excellent for weight management because they help control hunger as they detoxify. You can choose any citrus to include for this So Much Citrus Salad.

INGREDIENTS

SERVES 2

  • 1 cup Baby Greens Salad
  • 1 cup Organic Frisee
  • 1/2 cup Radicchio
  • 1/4 cup avocado
  • 1/4 fruit orange
  • 1/4 grapefruit
  • 1 tbsp Hemp Seeds

DIRECTIONS

1 Pour dressing* over greens and toss
2 Assemble on plates with avocado and citrus segments, then sprinkle hemp seeds on top
3 *Recipe for So Much Citrus Dressing:
4 Prep time: 5 minutes
5 Servings: 10
6 ¾ cup citrus juice: I used equal parts lemon, lime, and orange
7 ½ cup neutral oil
8 tbsp olive oil
9 tbsp whole grain mustard
10 tsp coconut sugar
11 ½ tsp salt
12 ¼ tsp dried ginger
13 /8 tsp cracked black pepper
14 In a mason jar, add all ingredients and shake well until uniform in texture
