Sonoran Hot Dogs

A tasty delight from El Guero Canelo in Tucson, Arizona.
Ingredients
- 8 Pork & Beef Frankfurters - Natural Casing
- 8 slices Bacon, Naturally Smoked
- 1 cup Reduced Sodium Pinto Beans
- 1 medium Yellow Onion
- 1/2 cup Chopped Red Tomato
- 2 tsp Mayonesa W/lime Juice
- 2 tsp Green Taco Sauce, Mild
- 1 tsp Mustard
- 8 Wheat Bolillo Roll
- 1 tbsp Cilantro
Directions
Wrap one slice bacon around each frank. Grill or pan-fry. Slice onion thinly, then saute until browned. Heat pinto beans in small pot. To serve, slice bolillo bread through one side, not all the way through. Put in one heaping tablespoon of pinto beans, some grilled onions, and one bacon-wrapped frank. Top with chopped tomatoes, green taco sauce, yellow mustard and lime mayonnaise.
This can be modified to your personal tastes - veggie hot dogs, veggie bacon, jalapenos, pico de gallo, guacamole - whatever you're in the mood for at the time!
