SourMama's Chicken, Veggie, and Noodle Soup

This is a very healthy soup full of vegetables and chicken with a little bit of egg noodles to give it a little body.
Ingredients
- 12 oz Chicken Breast (boneless,skinless)
- 1 medium , ra Yellow Onion (generic)
- 234 g Carrots
- 1 Large Stalk (11"-12" Long)
- 4 average potato
- 1 cup Frozen Sweet Corn
- 1 cup Broccoli
- 1 cup Hunt's Crushed Tomatoes
- 1 cup Noodles, Egg
- 1 tbsp Basil, Dried
- 1 1/2 Spices, Whole Bay Leaves
- 3 tbsp Parsley, Dried
- 52 oz Chicken Stock 33% Less Sodium
- 1 tsp Ground Thyme
- 1 tsp Spices, Crushed Red Peppers
- 1 tbsp Olive Oil
- 2 tbsp Pure Canola Oil
Directions
Saute onions, celery, and carrots in canola oil and olive oil with your bay leaves until onions are translucent. Add in cubed chicken and cook until chicken is no longer pink on the outside. It will cook on the inside in the the broth. After the meat has cooked to desired consistency add the chicken stock (or broth if you want it to be lighter), crushed tomatoes, corn, potatoes, and herbs. Salt and pepper to taste. Allow to simmer until potatoes are fork tender. Add in broccoli and egg noodles for about 7 minutes before serving.
