South Beach Diet Curried Chicken Salad

Serve this sensational salad as is or try it inside half of a large scooped-out tomato or on top of fresh salad greens. In later phases, use it as a sandwich filling inside a whole-wheat pita.
Ingredients
- 1 1/2 cups 1% Yogurt, Plain
- 1 tbsp Spices, Curry Powder
- 1/2 tsp Ginger Root
- 1 lb Chicken Breast
- 3 medium stalks Dole Celery
- 1/4 medium Red Onion (whole)
- 1/4 cup Cilantro
Directions
Whisk together yogurt, curry powder, and ginger in a large mixing bowl. Stir in chopped chicken, diced celery, diced onion, and chopped cilantro; season to taste with salt and pepper. Serve at room temperature or refrigerate for at least 1 hour before serving for more concentrated flavour.
