South Beach Pear Muffins

Ingredients
- 1 1/2 cups Whole Grain Organic Pastry Flour
- 1 cup Wheat Bran
- 2 tbsp No Calorie Sweetener
- 1 tsp All Purpose Baking Soda
- 1 tsp Ground Cinnamon
- 1/4 tsp Salt
- 1 cup 2% Milk
- 3 egg
- 2 tsp Pure Vanilla Extract
- 1 medium Pear, Bosc
- 3 tbsp Pure Canola Oil
Directions
Combine dry ingredients. Peel and dice pear in quarter inch pieces. Beat eggs slightly and add to dry ingredients with remainder of ingredients. Whisk only enough to incorporate well.
Spoon into 12 paper-lined muffin tins and bake in preheated oven at 350° for 20 minutes.
Insert a toothpick to test for done-ness.
Remove from muffin tins to a plate to serve.
