Southern Ham Salad

This is a Southern recipe and a perfect use of left over ham. It is a light, low-carb salad that is great on sandwiches, crackers or just tossed on a green salad.
Ingredients
- 2 cups Ham, Baked
- 1/4 cup Sweet Pickle Relish
- 1 Large Stalk (11"-12" Long)
- 2 large Hard-Boiled Egg
- 1/2 cup Mayonnaise
- 1/2 cup Onions
- 1 tbsp Dijon Originale Mustard
- 1/4 cup Parsley
Directions
Mince the ham to make about two cups. You can use a food processor but you will be more assured of a good consistency if you do it by hand.
Mince the parsley, onion, eggs and celery. Toss all together with the ham and blend thoroughly with the mayonnaise, relish and mustard.
Chill and serve.
