Southwest Fiesta Bake

This is a great fill you up meal that you can save for later in the fridge. Its yummy too.
Ingredients
- 1 lb 98% Lean Ground Beef
- 16 oz Whole Kernal Corn (no Salt Added)
- 16 oz Medium Picante Sauce
- 1 1/2 cups 4 Cheese Mexican Blend 2% Cheese
- 2 egg
- 3/4 cup Bisquick
- 1 tbsp Chili Powder Generic
- 1/4 tsp McCormic Garlic Salt
Directions
Pre-heat oven to 400 degrees. In a oven proof skillet brown the meat, seasoning to taste with the chili powder and garlic salt. Drain the grease off. Add in the corn and salsa and heat until warm. Turn the heat down to low. While your meat mixture is simmering, prepare the bisquik mix by adding in the eggs and about half of the cheese. (If the mixture is too sticky add in about a table spoon of milk.) Sprinkle the rest of the cheese over the meat mixture. Spoon the bisquik mixture evenly around the edge of the skillet. Then take about 2 tablespoons of cheese and sprinkle over the top of the batter. Bake in the oven for about 20 min until golden brown and when you stick a toothpick in the batter it comes out clean. Enjoy!!!! It was yummy.
