Southwest Quinoa with Black Beans

This can be eaten hot or cold. It's incredibly filling.
Ingredients
- 1 1/2 cups Organic Quinoa
- 3 cups Water
- 1 cube All-vegetable Bouillon-chicken
- 2 Fresh Sweet Corn On The Cob
- 2 cups Black Beans
- 1 cup Onions
- 1 1/5 tbsp Spices, Cajun Seasoning
Directions
Bring water to a boil. Add boullion cube and allow it to disolve completely. Add quinoa and cajun seasoning and cover. Cook on medium heat until completely cooked.
While quinoa is cooking, sautee onions in a frying pan. Add to cooked quinoa. Cut corn off cob and add to pot. Rinse and drain black beans, and add to mixture.
I recommend chopping up some cilantro and adding it in when it's all done.
