1. Heat the oil in a sauté pan over low heat. Add in the beans, cumin, garlic and water and bring to a gentle simmer. Remove the beans from the pan and set aside.

2. Crack the two eggs in a bowl and whisk. Pour the eggs into the pan and cook until scrambled, and season with salt and pepper.

To plate: combine the eggs with the beans and top with avocado, scallions and red pepper flakes if desired.
