Southwestern Frittata

Frittata with veggies and black beans
Ingredients
- 6 Large Egg
- 1/4 cup Organic Soymilk
- 2 1/2 cups Baby Spinach
- 1/2 cup Black Beans
- 1/4 medium Onion, Sweet
- 1 Raw Clove
- 6 oz Plain Yogurt
- 6 tbsp Picante Sauce
- 1/2 medium Red Bell Pepper, Raw
Directions
saute onion, garlic, and bell pepper.
Add spinach and black beans.
Top with scrambled eggs and milk.
cook over medium for 10 minutes, covered, until eg starts to lift from pan.
Bake at 350 for 10 minutes until cooked through in the middle.
Add cumin, salt, and pepper to taste.
