Guiltless Gourmet chipotle baked organic chips, ancho chili & cayenne lowfat mayo, cole slaw, very slightly seared sushi-grade tuna. Yum!

Ingredients

Directions

Place 3 Tbsp of light mayo in a bowl and add 1 tsp of ancho chili powder and 1 tsp cayenne powder, stir and sit aside.
Shred 1/2 cup cabbage and 1 whole carrot and put in small bowl.
Add half of the mayo to the slaw mixture. Place the other half in a baggie and snip the end to drizzle on chalupa.
Dip tuna in flax seed on the two largest sides of the steak.
Spray skillet with canola oil and heat.
Once skillet is hot, sear tuna steak quickly and place on a cutting board.
Arrange 9 chips on a platter and spoon slaw mixture on each one.
Slice tuna steak in thin squares and place one on top of slaw.
Drizzle tuna with remaining southwestern mayo and serve!
