Tastes like a plate of delicious spaghetti, cooks and eats like a soup, made w/ high fiber rotini! Tons of veggies and lean beef make it a meal!
Ingredients
pesto:- 32 tbsp Basil, Fresh
- 1/2 cup Freshly Grated Parmesan
- 1/2 cup Extra Virgin Olive Oil
- 0 cup Pine Nuts
- 3 tbsp Garlic
- 1 serving Black Pepper
- 12 oz Ground Beef 95%
- 2 cups Broccoli, Frozen
- 2 cups Mixed Vegetables
- 1 tsp Beef Flavor Instant Bouillon
- 4 serving - Tomato Sauce
- 4 svgs per box Smart Taste Rotini
- 1 1/2 tsp Garlic
- 1 cup Lowfat Cottage Cheese
Directions
pesto: process
Saute Garlic and pesto in frying pan for about 5 mins. Add raw ground beef, crumbled up and continue to chop in pan as it cooks.
Stir frequently to mix pesto/garlic into meat.
Once meat is cooked, add about 4-5 cups hot water, boullion, vegetables, rotini, tomato sauce, and whatever spices you like. I used a little oregano and onion powder to taste.
Bring to a boil, then reduce heat, cover, and simmer for about 1/2 hr, or until pasta is still firm but done enough to eat.
Stir in cottage cheese, then let cool for 5 minutes. By that time, Pasta will cook rest of the way, and dinner's ready!
