Spanish Meatballs
Ingredients
- 750 g Mince
- 2 Eggs
- 2 cloves Garlic Clove
- 1/3 cup Breadcrumbs
- 3 tbsp Parsley
- 1/2 tsp Pepper, Black
- 1/8 tsp Canola Oil No-stick Cooking Spray
- 2 cloves Garlic Clove
- 1 tsp Paprika, Sweet
- 1/4 tsp Cayenne Pepper
- 880 g Crushed Tomatoes
- 2 tbsp red wine
- 150 g Green Bell Pepper
- 2 tsp Sugar
- 1 tbsp Basil, Fresh
Directions
Step 1. Combine mince, egg, garlic, breadcrumbs, parsley and pepper. Using wet hands, shape mixture into 24 golf ball sized meatballs. Cover and refrigerate for 1 hour.
Step 2. Spray a non stick frying pan with cooking spray and place over medium heat. Add half the meatballs and cook for 6-8 minutes or cooked through, turning to brown evenly. Remove from pan and keep warm. Repeat process with remaining meatballs.
Step 3. Make Tomato sauce: spray a medium frying pan with oil and saute garlic, paprika and cayenne pepper over medium-low heat for 1-2 minutes. Add tomatoes, wine,capsicum and sugar. Stir well, reduce heat and simmer for 10min. Add meatballs and cook for another 10mins or until sauce thickens. Season with peper and garnish with herbs and Parmesan.
