Greek spinach cheese pies
Ingredients
- 284 g Spinach, Frozen, Chopped Or Leaf, Unprepared
- 1 medium Onion, Raw
- 200 g Feta Cheese Traditional
- 2 tbsp Pure Olive Oil
- 2 tbsp Parsley, Dried
- 6 tbsp White Flour
- 4 egg
- 10 Phyllo Pastry Sheets
- 4 tbsp Butter
Directions
Defrost spinach and squeeze as much water out as possible. Chop and cook the onion in the olive oil. Put the onions and spinach in a bowl. Mix in the parsley, flour and eggs. Crumble the feta cheese and mix in gently. Cut filo sheets into 4 inch wide strips. Brush with melted butter. Put one heaping Tbsp spinach mixure on the bottom of each strip. Fold the bottom part up so that a triangle is formed. Then fold up again so that the triangle shape is maintained. Keep folding upward until the strip is completely wrapped around.
