It’s just not winter without squash, and these oven fries make our fave cool-weather veggie even more comforting. Packed with vitamin A, the squash’s naturally sweet flavor makes these a great stand-in for sweet potato fries at just a fraction of the calories

Ingredients

Directions

1. Preheat the oven to 425 degrees Fahrenheit.
2. Peel the squash, slice in half lengthwise and remove the seeds. Chop the neck into fries, approximately ¾-inch thick. Slice the “base” into ¾-inch slices.
3. Pat the fries with paper towel to remove excess liquid.
4. Place the squash, coconut oil, ginger, nutmeg and 1 Tbsp of the cinnamon in a bowl, then stir to combine.
5. Pour the fries into a baking sheet lined with greased parchment paper.
6. Bake for 20 to 25 minutes (until the squash starts to brown), turning the fries after 10 minutes.
7. While the fries are baking, transfer the almond butter to a small microwave-safe mixing bowl, and microwave on high for 10 seconds.
8. Add the Greek yogurt and the remaining cinnamon, then stir to combine.
9. Remove the fries from the oven and serve immediately, with the dipping sauce on the side.
