1. Spread hummus onto the flatbread, such as naan or pocketless pita. (Hint: For added texture and intrigue, grill or pan-grill the flatbread!)

2. Top as desired with the tomatoes, cucumber, and onion. Drizzle with the olive oil. Sprinkle the tomatoes with the cumin, the cucumber with the black pepper, and the onion with cayenne.

3. Enjoy with a glass of water with a fresh lemon slice.
