Spicy Lentil Soup

This totally fulfills my craving for something warming, earthy and spicy.
Ingredients
- 1/2 medium Onion, Raw
- 1 tbsp Olive Oil
- 1/2 cup Carrots
- 1 small stalk celery, raw
- 250 g Diced Tomatoes & Green Chilies
- 1 cup Lentils, Brown, Organic
- 1 tbsp Bay Leaf
- 32 oz Purified Water
- 1/4 tblsp Cracked Black Pepper
- 1/4 tbsp Oregano, Ground
- 1 cloves Garlic Clove
Directions
Saute the onions, carrots and celery in the olive oil.
Toss in the minced garlic and saute for 1 minute.
Add the drained tomatoes and chilies, lentils and water and bring to a boil.
Add the bay leaf and spices and simmer for an hour or until the lentils are tender.
Eat.
