This dish tastes a little spicy from red-hot chili pepper, a little sweet from sweet red bell pepper and very savory from organic chicken sausage (or, if you prefer, pick vegan sausage) and baby potatoes (choose tricolor for eye appeal).



1. Heat the oil in a large cast-iron or other stick-resistant skillet over medium. Add the potatoes, bell pepper, onion, chili pepper, and salt, increase heat to medium-high, and stir to combine. Cover and cook until the potatoes are nearly cooked through, about 10 minutes, stirring twice throughout cooking.
2. Remove the lid, add the chicken sausage (or vegan sausage), scallions, garlic, and lemon juice, and sauté until potatoes are fully cooked and browned as desired, about 5 minutes. (Hint: If ingredients start to stick to skillet, drizzle in a little more olive oil.)
3. Stir in the parsley, adjust seasoning, and serve immediately from the skillet.
