Spicy Squash, Greens & Turkey Sausage Pizza

The combination of crispy kale, creamy butternut squash and savory sausage is so scrumptious on this thin-crust pizza that it’s absolutely impossible to resist. And by forgoing the cheese and choosing organic Italian turkey sausage, you can have your sausage slices without all the fat and grease.

INGREDIENTS

SERVES 4

  • 3 tbsp Extra Virgin Olive Oil
  • 2 1/2 cups raw butternut squash
  • 1 clove garlic
  • 1/4 tsp Sea Salt
  • 1 oz Kales, Mixed Baby
  • 1/2 medium red onion
  • 1/4 tsp chili flakes
  • 1/8 cup Whole Wheat Pastry Flour (100% Stone Ground)
  • 16 oz Dough Pizza Whole Wheat
  • 6 oz Sausage, Italian, turkey, smoked

DIRECTIONS

1 Place a stick-resistant large baking sheet, pizza pan or pizza stone in 500°F oven to preheat.
2 Meanwhile, heat 1 tablespoon of the oil in a large stick-resistant skillet over medium. Add squash, garlic and salt, increase heat to medium-high, and sauté until cooked through and browned, about 8 minutes. Transfer to a medium bowl and roughly smash with a large fork; set aside.
3 In a separate bowl, toss together kale, onion, hot pepper flakes, and 1 tablespoon of the oil; set aside.
4 Lightly flour a clean kitchen surface. Shape dough with a rolling pin into a 13- to 14-inch round crust.
5 Carefully transfer the prepared dough to the preheated baking sheet. (Hint: Gently roll up dough over a rolling pin, then unfold onto the baking sheet.) Quickly brush the rim of the crust with the remaining 1 tablespoon oil. Dollop the pizza dough with the mashed squash, leaving about 1⁄2-inch rim. Top with the kale mixture and then the sausage.
6 Bake until the crust is crisp and brown, about 15 minutes.
7 NOTE: Use multigrain or whole wheat pizza dough.
