Spicy Turkey & Chipotle Pepper Soup

You can pretty much do what you want with it. I'm adding it to livestrong to find out nutrition info and to help spread the work of PGEW!
Ingredients
- 4 cups Chicken Stock
- 1 cup Tap Water
- 1 cup Whole Turkey Breast
- 1 1/2 cups Mixed Vegetables, Frozen
- 1/2 medium , ra Yellow Onion (generic)
- 3 Garlic Clove
- 1 tbsp Pure Olive Oil
- 1 cup Cilantro
Directions
In a large pot over medium high heat, add the olive oil, garlic and diced onion and cook until the onion becomes translucent and the garlic begins to brown. Add the tomato, chipotle peppers, salt and cumin, sauté for about 2 minutes. Next, add the turkey stock and water. Bring to a low boil and then add the turkey meat and mixed veggies. Simmer for about 10 minutes or so, until all the flavors are combined and the aroma permeates the air. Serve generous amounts of the soup in large bowls, garnish with cilantro and enjoy!
*I left out the tomato (because I hate tomatoes) and added an extra half cup of veggies. I may go back and add more meat and veggies later depending on how much broth is left. This seems like it could also feed more than four depending on how much you eat.
