Spinach & Bacon Quiche

Frozen chopped spinach, bacon, onion and egg custard baked in a pie shell.
Ingredients
- 3 1/2 servings per pac Frozen Chopped Spinach
- 4 fried slices Naturally Hickory Smoked Bacon
- 1 tbsp Bacon Grease drippings
- 2 egg
- 250 ml Milk 1%
- 4 tbsp Onions, Raw, Chopped
- 1 Pet-Ritz Pie Crusts Regular
- 1/2 cup Reduced Fat Shredded Cheddar Cheese
Directions
Preheat oven to 400. Prick crust all over and blind bake for 10 min. Remove to cook and reduce oven heat to 325.
Cook bacon in pan. Remove when crisp and reserve 1 T bacon grease. Add chopped onion to pan and cook 2-3 min til translucent, not browned. Add chopped spinach and crumbled bacon; cook another minute or two.
Combine milk and eggs, whisking well. Add salt/pepper to taste and just a small pinch of nutmeg if you have it.
Add spinach mixtiure and egg mixture to pie crust and bake ~35-40 min at 325. Remove from oven and allow to cool.
I like to eat this at room temperature. I put "Breakfast" in the course type, but it's good for lunch or whenever.
