Spinach Casserole

Low-carb spinach casserole recipe for those on Atkins or South Beach diet plans.
Ingredients
- 20 oz Spinach - Frozen, Chopped Or Leaf, Cooked, Boiled, Drained, Witho
- 1/2 cup Mushrooms
- 1/4 cup Onions
- 1 cloves Garlic Clove
- 1 tsp Salt
- 1/2 tsp Ground Black Pepper
- 6 oz Philadelphia Light Cream Cheese
- 2 tbsp Milled Flax Seed
- 1 cup Sharp Cheddar (shredded)
- 1 tsp Chinese Five Spice Powder
- 2 tbsp parmesan cheese, grated
- 1 tbsp Olive Oil
- 1/2 tsp Granulated Baking Splenda
- 2 tbsp Parmigiano Reggiano
Directions
defrost and drain the frozen spinach.
Preheat oven to 350.
Saute the onion until softened.
Mix all ingredients except for the Parmesan cheese in the casserole dish. Sprinkle Parmesan on top.
Bake for 40-45 minutes or until knife inserted in the center comes out clean and cheese on top begins to brown.
