Spinach Eggs

Green Eggs! Ham optional...yummy way to get some veggies into your breakfast. Spinach, eggs and a sprinkle of Parmesan cheese complete the meal. Recipe adapted from "Deceptively Delicious"
Ingredients
- 1 1/2 cups Fresh Baby Spinach
- 2 Egg, Large
- 1 tsp Garlic
- 2 tbsp Onions
- 1 tsp Grated Parmesan Cheese
- 1 tbsp Margarine
- 1 tbsp Fat Free Milk
Directions
In a frying pan, melt the margarine. Add in the onion, cook for 1 min then add in minced (or pressed) garlic. Add in spinach. Add in 1/4 cup water. Cook until wilted and the water is mostly evaporated.
Once cooked, puree in a food processor or "Magic Bullet" until smooth.
In small bowl, scramble eggs with 1tbsp milk. Add in 1tbsp margarine in pan and pour in eggs. Then add in puree and mix while cooking. Cook until solid and any liquid has evaporated.
Serve on plate and sprinkle with Parmesan cheese.
