Spinach, Shrimp, & Avocado Salad

Ingredients
- 16 oz Raw Shrimp
- 6 cups Spinach
- 2 Lemon Wedge Juice, Raw
- 1 tbsp Olive Oil
- 4 tsp All Natural Capers
- 1/2 tbsp Organic Raw Honey
- 120 g Piccolo Cherry Tomatoes
- 2 med Avocado
Directions
1. Cook 1 pound raw peeled and deveined medium or large shrimp in simmering salted water until opaque, 3 to 5 minutes; cool.
2. In a bowl, whisk together 3 tablespoons each lemon juice and olive oil, 1 tablespoon chopped capers, and ½ teaspoon honey; season with salt and pepper. Toss with 8 cups spinach, 4 chopped plum tomatoes, 1 sliced avocado, and the shrimp.
