Spring Mix Salad with Feta Cheese

Organic Spring Mix, grape tomatoes, english cucumbers dressed with olive oil & balsamic vinegar topped with feta cheese. A pita on the side cut in quarters is the perfect accompaniment. This salad is light on the dressing but heavy on flavor!
Ingredients
- 2 cups Spring Mix
- 2 oz The Authentic Grape Tomatoes
- 1 tbsp Olive Oil
- 1 tbsp Great Value Balsamic Vinegar
- 1 oz Feta Cheese, Reduced Fat
- 1 cup English Cucumber
- 56 g White Pita Bread
Directions
Place Spring Mix in dish and garnish with sliced grape tomatoes & cucumbers. Top with 1oz. of Reduced Fat Feta Cheese. In a small bowl or up, mix together 1 tbsp. balsamic vinegar and 1 tbsp. olive oil. To that add sea salt and fresh ground black pepper to taste. Drizzle over top of salad. No need to toss. This salad is very light and doesn't need to be weighed down with heavy dressings. Cut Pita into four quarters and place around salad.
