This savory oatmeal incorporates zucchini, shallots, green peas and fresh peppermint, providing lovely springtime appeal to any plate.

1. Heat the oil in a large (PFOA-free) nonstick skillet over medium heat. Add the zucchini and half of the shallots, increase heat to medium-high, and sauté until the zucchini is lightly browned, about 5 minutes. Stir in the (fresh or frozen thawed) peas until heated through, about 1 minute. Add the mint and 1/4 teaspoon of the salt. Set aside, covering loosely to keep warm.

2. Bring water (or low-sodium vegetable broth), remaining shallots, remaining 3/4 teaspoon salt, and the pepper to a boil in a medium saucepan. Reduce heat to medium, add the oats, and stir until fully cooked, about 5 minutes. Stir in the vegetable mixture.

3. Transfer to bowls and serve as a side dish.
