This savory oatmeal is inspired by Cajun red beans and rice, but it’s more interesting and easier to make. Recipe and image courtesy of Jackie Newgent, RDN.

Ingredients

Directions

1. Heat the oil in a large (PFOA-free) nonstick skillet over medium-high. Add the turkey, bell pepper, onion, Cajun seasoning, and 1/4 teaspoon of the salt and sauté until the turkey is crumbled and well-done, about 5 minutes. Set aside.

2. Bring the broth, diced tomatoes (including all the liquid), and remaining 1/2 teaspoon salt to a boil in a large saucepan. Reduce heat to medium, add the oats, beans, and turkey mixture, and stir until the oats are fully cooked, about 5 minutes.

3. Transfer to bowls and serve

Reviews

  • This recipe has two problems. The ingredients list includes 14.5 oz green chiles, but does not list tomatoes. The instructions tell you to add (some amount of) tomatoes, but never mentions chiles.
