Vegan French Toast With Strawberries and Cream

Craving something sweet? Try our vegan French toast with an optional strawberries and cream topping. This recipe features fresh strawberries, which contain a ton of antioxidants known to help fight cancer-causing inflammation. To make a lean cream that rivals the real thing, all you'll need are vegan Greek yogurt (we use a coconut milk-based alternative) and maple syrup.

INGREDIENTS

SERVES 3

  • 6 slice Vegan Oat Bread (egg-free)
  • 1 tsp Pure Vanilla Extract
  • 3/4 cup Almond Milk
  • 1 tsp Cinnamon, Ground
  • 1 tbsp Nutritional Yeast
  • 2 tbsp Better for Bread Flour
  • 1/2 tsp Sea Salt
  • 2 tbsp Coconut Oil
  • 2 cups strawberries
  • 1/4 cup Maple Syrup
  • 1/2 tbsp Powdered Sugar, Confectioners
  • 2 container Greek Style Cultured Coconut Milk Yogurt

DIRECTIONS

1 In large bowl mix vanilla extract and almond milk.
2 In small bowl mix cinnamon, nutritional yeast, flour and salt. Pour into into large bowl of mixed vanilla and almond milk.
3 Heat griddle or large pan to medium and add a little coconut oil. Quickly dip bread into milk mixture completely covering both sides. Do not soak or it will be soggy.
4 Place on hot griddle and cook on both sides for 3-4 minutes or until toasted and golden brown. Repeat with the rest of the bread slices.
5 To make the cream topping, mix the Greek-style yogurt with ½ cup maple syrup.
6 To serve, plate one slice of French toast, one dollop of sweetened yogurt and sliced strawberries, and repeat to have a layers. Finish with sliced strawberries on top, dust with powdered sugar and drizzle with maple syrup.
7 Notes:
  To make an individual serving, reduce the suggested ingredients to 1/3 of the measurements. Cooking instructions remain the same.
