Craving something sweet? Try our vegan French toast with an optional strawberries and cream topping. This recipe features fresh strawberries, which contain a ton of antioxidants known to help fight cancer-causing inflammation. To make a lean cream that rivals the real thing, all you'll need are vegan Greek yogurt (we use a coconut milk-based alternative) and maple syrup.

1. In large bowl mix vanilla extract and almond milk.
2. In small bowl mix cinnamon, nutritional yeast, flour and salt. Pour into into large bowl of mixed vanilla and almond milk.
3. Heat griddle or large pan to medium and add a little coconut oil. Quickly dip bread into milk mixture completely covering both sides. Do not soak or it will be soggy.
4. Place on hot griddle and cook on both sides for 3-4 minutes or until toasted and golden brown. Repeat with the rest of the bread slices.
5. To make the cream topping, mix the Greek-style yogurt with ½ cup maple syrup.
6. To serve, plate one slice of French toast, one dollop of sweetened yogurt and sliced strawberries, and repeat to have a layers. Finish with sliced strawberries on top, dust with powdered sugar and drizzle with maple syrup.

Notes:
- To make an individual serving, reduce the suggested ingredients to 1/3 of the measurements. Cooking instructions remain the same.
