“This is one of my favorite go-to salads, especially in the summer when strawberries are juicy and in-season,” says Shana Hussin, RD, certified health coach, and creator of Go Meals Go! “With only five ingredients, this salad is simple to assemble and packed with vitamins, minerals, and antioxidants. One serving provides 60 percent of your daily recommended value of vitamin A, 70 percent of vitamin C, 15 percent of calcium, and 20 percent iron.”

2 oz fresh spinach leaves

4 fresh strawberries, sliced

1 tablespoon reduced-fat bleu cheese crumbles

1 tablespoon sliced almonds

2 tablespoons light poppy seed dressing (bottled)


Directions:

Assemble spinach on large plate. Top with the remaining ingredients.

Makes 1 serving

Per serving: 270 calories, 12g fat, 2g saturated fat, 680mg sodium, 36g carbohydrates, 7g fiber, 9g protein
