Directions

1. Fill a double Old Fashioned glass with crushed ice, adding enough to create a mound on top. Set it aside.

2. In a shaker, muddle the strawberries, lemon juice, lime juice and simple syrup. Add the mint, St-Germain, gin and rhubarb bitters, and fill with ice.

3. Shake briefly, open the shaker and add the sparkling rosé. Double-strain into the prepared glass and top with a layer of Bols Amaretto Foam if desired.

4. Garnish with a mint sprig and freshly grated lime zest.

TO MAKE SIMPLE SYRUP: 1 part sugar, 1 part water
