Created by Joshua Yerkey, EMC Seafood & Raw Bar, Los Angeles. Joshua recommends using Few American Gin. Topping with a layer of Bols Amaretto Foam is optional.

INGREDIENTS

SERVES 1

  • 1/4 cup Strawberries
  • 3/8 oz Lemon Juice
  • 3/8 oz Lime Juice
  • 1/4 oz Simple Syrup
  • 3 serving mint leaves
  • 3/4 oz St. Germain Elderflower Liquor
  • 1 1/2 oz gin
  • 1/4 oz rhubarb bitters
  • 3/4 oz Sparkling Rose
  • 1/5 g fresh mint leaves
  • 1 tsp Lime Zest

DIRECTIONS

1 Fill a double Old Fashioned glass with crushed ice, adding enough to create a mound on top. Set it aside.
2 In a shaker, muddle the strawberries, lemon juice, lime juice and simple syrup. Add the mint, St-Germain, gin and rhubarb bitters, and fill with ice.
3 Shake briefly, open the shaker and add the sparkling rosé. Double-strain into the prepared glass and top with a layer of Bols Amaretto Foam if desired.
4 Garnish with a mint sprig and freshly grated lime zest.
5 TO MAKE SIMPLE SYRUP: 1 part sugar, 1 part water
