stuffed bell peppers
Ingredients
- 2 cups Basmati Rice
- 1 lb Ground Sirloin (93/7)
- 1/2 cup Onions
- 4 Garlic Clove
- 1 tbsp Thyme, Fresh
- 1 tbsp Dill Weed, Fresh
- 3/4 tsp Salt
- 1 tsp Pepper*
- 8 oz Feta
- 1 cup Zucchini
- 4 large Green Bell Pepper
- 1 cup 0% Yogurt
- 2 cups Tomato Basil Spaghetti Sauce
- 2 cups Purified Water
Directions
make rice (while rice is cooking, prepare filling)
slice tops of bell peppers and remove seeds
brown beef
add onion and garlic
saute together
add grilled zucchini
saute until warm
add dill, thyme, salt and pepper to taste
turn off heat
add rice
mix well
stir in feta (or add as a condiment at the end)
stuff in peppers
place stuffed bell peppers in a pot
add tomato sauce and water
bring to boil, and simmer 7 minutes
peppers are ready when they are soft to touch and a knife should easily pierce skin
serve with 1c tomato sauce & 1/4c greek yogurt
