Stuffed Hot-and-Sweet Peppers

These hot and sweet cherry peppers actually look like little red pumpkins. These guys throw some major heat but have underlying sweet notes too, making them complex and delicious. The goat cheese helps to soothe the heat (although they still aren’t for the faint of heart), and the roasted pistachios add salt and crunch.

INGREDIENTS

SERVES 25

  • 6 oz Goat Milk Brie, Soft Ripened Goat Cheese
  • 1 oz Roasted & Salted Shelled Pistachios
  • 1/4 tsp Ground Black Pepper
  • 16 oz Trader Joes Hot n Sweet Cherry Peppers

DIRECTIONS

1 In a bowl, combine goat cheese and chopped pistachios. Mix well until cheese is softened and well combined with nuts.
2 With a spoon, carefully stuff the peppers with the cheese mixture.
3 Garnish with fresh, cracked pepper.
