Stuffed & Smothered Chicken Breast

Chicken breast stuffed with spinach & sour cream
Ingredients
- 20 oz Chicken Breast
- 2 tbsp Sour Cream
- 2 cups Baby Spinach
- 1/2 cup Diced Tomatoes
- 1/2 cup 2% Milk Mozzarella
Directions
- Butterfly chicken breasts (20oz. = about 3 full chicken breasts, I cut them into 6 halves). Season with pepper & chopped onions.
- Bake opened breasts for 20 minutes on 350.
- Mix chopped spinach and sour cream in a bowl. Scoop 1 spoonful into the middle of each chicken breast and fold one flap over and secure with a toothpick. Bake for 10 minutes.
- Top with 1 spoonful of diced tomatoes and 1 spoonful of mozzarella. Bake for another 15 minutes.
