OK - not great for diets but a fave of the family and since this recipe makes a lot if you freeze them in packets of 2 they make a nice treat.

Ingredients

Directions

Whip softened butter with sugar using mixer paddle. Once it is light and fluffy add eggs (one at a time) and vanilla (can substitute 1 tsp vanilla for 1 tsp almond extract - artifiicial best to avoid allergy issues).

Combine dry ingredients (only 5 cups of flour - the other is for rolling dough.and slowly add them to the butter mixture. Once well blended wrap in plastic and refrigerate for 2 hours plus.

Use 1 extra cup flour for rolling. Pull small pcs of large dough roll at a time and roll on floured well surface - sprinkling flour on top of dough too. Cut and place on cookie sheet.

Bake 400 degrees for 6-7 minutes depending on cookie sheet. Insulated take 6 / non-insulated take 7.

Cool completely on cookie rack - frost using XX sugar moistened with water and food coloring. Add spinkles too ;-)
