Superfood Bow-Tie Salad Bowl

Got a picnic to go to? Bring this with you! It’s a healthier, glammed-up take on Southern-style macaroni salad.

INGREDIENTS

SERVES 6

  • 8 oz Farfalle
  • 3 tbsp mayonnaise
  • 1 1/2 tbsp Apple Cider Vinegar
  • 1 1/2 tsp Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Paprika
  • 1/2 cup Red Onion
  • 1 cup Roasted Red Bell Pepper
  • 1/3 cup Pickles, Bread & Butter Chips
  • 2 1/2 cups Arugula
  • 4 med Hard-Boiled Eggs

DIRECTIONS

1 Prepare farfalle (or other short-shaped pasta) according to package direc¬tions in salted boiling water. Drain; stir pasta in the saucepan with several ice cubes to cool; drain well.
2 In a large bowl, whisk together mayonnaise, 1 tablespoon vinegar, mustard, 1/4 teaspoon salt, and paprika until well combined. Add well-drained pasta, onion, bell pepper, and 1/8 teaspoon salt and stir to combine. (Note: If using jarred roasted bell pepper, well drain use 1/2 cup diced for recipe.) Finely dice the pickle chips and stir into pasta.
3 In a medium bowl, gently toss together arugula, 1 1/2 teaspoons vinegar, eggs, and 1/8 teaspoon salt.
4 Gently stir arugula mixture into pasta mixture. Adjust seasoning.
5 Transfer salad to individual bowls and serve.

7 This recipe uses whole-grain farfalle.
