Supper Veggie Fried Rice

If you don’t have these veggies on hand -- peas, carrots, corn -- dice up whatever vegetables you do have from mushrooms to kale, it all works here.

INGREDIENTS

SERVES 6

  • 3 tbsp olive oil
  • 1 onion
  • 3 garlic clove
  • 1 cup carrot(s)
  • 1 cup frozen peas
  • 1 cup Frozen Corn
  • 1/4 cup low-sodium soy sauce
  • 3 cups Cooked Brown Rice
  • 1/2 cup Chives

DIRECTIONS

1 In a wok or large frying pan, heat the olive oil over low. Stir in the onions and garlic and saute for about three to five minutes. Add in the carrots and saute for three minutes more. Then toss in the peas and corn and cook for one minute.
2 Add in the soy sauce and sriracha, stir and cook for two minutes. Then add in the brown rice and chives and cook for two minutes more. Serve warm.
