Sweet Potato and Kale Chicken Soup

Ingredients
- 1 medium Sweet Potato
- 4 cups Kale
- 8 oz Chicken Breast
- 1 cup Carrots
- 2 small stalk celery, raw
- 5 cups Low Sodium Chicken Broth
- 1 3/4 cups Black Beans
- 1 tbsp Extra Virgin Olive Oil
Directions
Chop kale (1 bunch) into 1-inch pieces, chop potatoes, chicken, celery, and carrots. Mix with chicken broth in slow cooker. Add, along with beans, olive oil, and desired herbs and seasonings, into slow cooker and set on high for 4 hours.
