Sweet potatoes are not like your average spuds. The orange-fleshed versions come with beta-carotene, a powerful antioxidant that helps to protect against cancer. A single, medium-sized potato provides more than your daily requirement of vitamin A, about a third of the vitamin C you need, nearly 15 percent of your recommended daily fiber and 10 percent of your needed potassium.

1. Slice sweet potato ¼ inch thick, place in a large bowl and drizzle with coconut oil.
2. Season with cumin, chili powder, garlic powder, salt and pepper.
3. Layer sweet potato slices in a cast iron skillet and bake at 450 ̊F degrees for 15-20 minutes.
4. Remove the sweet potato from the oven. Sprinkle with cheese and put back in oven for another 3 minutes to melt the cheese.
5. Remove from the oven and top with avocado, onions, tomatoes, jalapeño, black beans, and cilantro.

Note:
To make an individual serving, reduce the ingredients by half the suggested measurements. Reduce cooking time to 14-18 minutes in the oven.
