Sweet and Savory Kale

Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/4 cup Onions
- 2 clove Garlic
- 1 tbsp Classic Dijon Mustard
- 2 tsp Blackstrap Molasses
- 1 tbsp Apple Cider Vinegar
- 1 1/2 cups Organic Vegetable Broth
- 5 cups kale, raw
- 20 g Craisins
- 1/5 tsp Salt
- 1/2 tsp Ground Black Pepper
Directions
Heat olive oil in a large pot over medium heat. Stir in the onion and garlic; cook and stir until the onion softens and turns translucent, about 5 minutes. Stir in the mustard, molasses, vinegar, and vegetable stock, and bring to a boil over high heat. Stir in the kale, cover, and cook 5 minutes until wilted.
Stir in the dried cranberries, and continue boiling, uncovered, until the liquid has reduced by about half, and the cranberries have softened, about 15 minutes. Season to taste with salt and pepper. Sprinkle with sliced almonds before serving (optional).
