In this dish, we balance out acorn squash’s sweetness with cider vinegar’s sour notes. You’ll simply saute acorn squash with cabbage, and then drizzle on vinegar, honey and a pinch of sea salt. Cabbage is rich in antioxidants and can help prevent inflammation. Feel free to use red or green cabbage, depending on what’s available.

1. Place the oil in a large pan over medium heat and sauté for a minute.
2. Add the squash and cabbage.
3. Sprinkle with a pinch of sea salt, then add the vinegar and honey.
4. Mix well and then let the mixture boil with a lid on until tender.
5. Remove the lid and boil any excess liquid away while stirring.
