Sweet & Spicy Bean Soup (vegan)

This is a vegan recipe I created, but I'm sure you could add ground turkey, beef or chicken to it and would be great! It's spicy but also surprisingly sweet. I topped it off with some vegan sour cream and cheese.
Ingredients
- 3 cups Vegetable Culinary Stock Broth
- 3 cups Black Beans
- 1 1/2 cups Pinto Beans
- 1 1/2 cups Great Northern Beans
- 1 cup Diced Tomatoes & Green Chiles
- 3 cups Butternut Squash
- 1 tbsp Yellow Mustard
- 1 tbsp Soy Sauce
- 1/4 cup Brown Sugar
- 1 tbsp Parsley, Dried
- 1 tsp Garlic Powder
- 1/2 tbsp Minced Garlic
- 1/4 cup Cilantro
Directions
Drain all beans and place into a Crock Pot with the diced tomatoes and vegetable stock. Add spices and seasonings (all other ingredients) and cook on High for 4 hours, or until squash is soft.
