Sweet and Spicy Roasted Pumpkin Seeds

Cut out these messy, time-consuming steps of having to scrape your own seeds out of a pumpkin by going with Trader Joe’s In-Shell Pumpkin Seeds. They’re already salted and roasted. Simply add your own holiday flair to the mix by flavoring the seeds with bourbon barrel-aged maple syrup and spicy nutmeg, ginger, allspice and cinnamon.

INGREDIENTS

SERVES 20

  • 14 oz In Shell Pumpkin Seeds
  • 2 tbsp Organic Virgin Coconut Oil
  • 2 tbsp Maple Syrup
  • 1 tbsp Cinnamon, Ground
  • 1 tsp Allspice, Ground
  • 1/2 tsp Nutmeg (Ground)
  • 1/2 tsp Ground Ginger

DIRECTIONS

1 Preheat oven to 350 degrees.
2 In a large bowl, combine bourbon maple and coconut oil (liquid). Set aside.
3 Next, in small bowl, combine cinnamon, nutmeg, ginger and allspice. Set aside.
4 Place seeds in a large bowl and mix with maple/coconut oil liquid until well coated. Next add in combined spice mixture and toss well.
5 Place on a cookie sheet and roast seeds in oven until golden, about 10 to 15 minutes.
6 Stir seeds as they cool to prevent sticking.
