Swiss Chard Frittata

A simple egg & veg frittata, can be used as a base for additional ingredients.
Ingredients
- 4 cups Chard, Swiss
- 6 egg
- 2 tbsp Onions
- 1 tbsp Olive Oil
Directions
Chop onion finely, sautee until translucent in olive oil.
Chop Chard into fine ribbons, add to pan with oil & onions, sautee until soft (around 5 minutes)
Beat eggs thoroughly, pour over hot vegetable mixture directly into pan … stir to assure even distribution of eggs & veggies.
When eggs begin to set around the edges, move entire pan to a 375º oven for 5-8 minutes until center of frittata is cooked completely.
Cut into quarters and serve.
OPTIONS: Experiment with additional toppings, such as bacon, crumbled sausage, grated cheese, mushrooms, sun dried tomatoes etc…
