Swiss Chard with Raisins, Olives and Onions

Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/2 cup Onions
- 1/2 lb Swiss Chard
- 1 tbsp Water
- 1/8 cup Golden Raisins
- 1 tblsp Olive
- 1/8 tsp Salt*
- 1/4 tsp Ground Black Pepper
Directions
Heat the oil in nonstick Dutch oven or very deep skillet over medium heat. Add the chopped onion and saute for 3 minutes, then add the chard stems and saute for another 3 to 4 minutes, by which point both the stems and onions should be softened.
Add the chard leaves chopped and saute for 1 minute. Add the water. Stir in the raisins and olives (pimento-stuffed) sliced crosswise into thirds. Cover, lower the heat, and steam for about 4 minutes. The liquid should be mostly evaporated; if not, raise the heat and cook for just a bit longer. Taste and, if necessary, add salt and pepper. Serve hot.
