INGREDIENTS

SERVES 2

  • 1 cup cooked quinoa
  • 2 cups Vegetable Broth, Low Sodium Organic
  • 3/4 tsp Sea Salt
  • 4 cups Red Swiss Chard
  • 3 tbsp Lemon Juice
  • 2 tbsp Olive Oil, Extra Virgin
  • 1 Sausage, Chicken, Smoked, Fully Cooked Links
  • 2 1/2 cups raw butternut squash
  • 3 tbsp Basil, fresh
  • 2 tbsp Pine Nuts

DIRECTIONS

1 In a small saucepan, add (rinsed) quinoa, broth, and 1/2 teaspoon salt. Bring to a boil over high. Cover, reduce heat to low, and simmer until liquid is just absorbed, about 18 minutes.
2 Top with Swiss chard leaves and stems; cover. Remove from heat and let stand covered for at least 5 minutes to allow chard to slightly wilt.
3 Meanwhile, in a liquid measuring cup, whisk together lemon juice, 1 tablespoon of the oil, and 1/8 teaspoon salt. Set aside.
4 Thinly slice sausage link into coins. Set aside.
5 Heat remaining 1 tablespoon oil in a large stick-resistant skillet over medium-high. Add butternut squash and 1/8 teaspoon salt and sauté until lightly browned, about 5 minutes.
6 Add sausage and sauté until sausage is lightly browned, about 3 minutes more. Stir in basil.
7 Stir together chard and quinoa. Arrange among two bowls the chard-quinoa mixture, butternut squash-sausage mixture, and pine nuts (preferably pan-toasted). Adjust seasoning.
8 Drizzle with the lemon vinaigrette, and serve.
