If you crave hash browns or sausage at breakfast time, this bodacious bowl will be calling to your taste buds -- and it's better for you! Chard is rich in naturally occurring nitrates, which are compounds that may help to boost athletic performance. So go get some exercise, and then grab this delicious bowl for your post-workout meal!

1. In a small saucepan, add (rinsed) quinoa, broth, and 1/2 teaspoon salt. Bring to a boil over high. Cover, reduce heat to low, and simmer until liquid is just absorbed, about 18 minutes.
2. Top with Swiss chard leaves and stems; cover. Remove from heat and let stand covered for at least 5 minutes to allow chard to slightly wilt.
3. Meanwhile, in a liquid measuring cup, whisk together lemon juice, 1 tablespoon of the oil, and 1/8 teaspoon salt. Set aside.
4. Thinly slice sausage link into coins. Set aside.
5. Heat remaining 1 tablespoon oil in a large stick-resistant skillet over medium-high. Add butternut squash and 1/8 teaspoon salt and sauté until lightly browned, about 5 minutes.
6. Add sausage and sauté until sausage is lightly browned, about 3 minutes more. Stir in basil.
7. Stir together chard and quinoa. Arrange among two bowls the chard-quinoa mixture, butternut squash-sausage mixture, and pine nuts (preferably pan-toasted). Adjust seasoning.
6. Drizzle with the lemon vinaigrette, and serve.
