Taco Salad South Beach Phase 1 Appropriate
Ingredients
- 1/2 cup Fat-Free Refried Beans
- 1/4 cup Fancy Shredded Mild Cheddar Cheese
- 1/2 oz Cherry Tomatoes
- 2 cups Romaine Hearts
- 1/4 cup Yellow Onion Chopped 1 Oz
- 1/4 cup Raw Red Bell Pepper, Chopped
- 1/4 tsp Ground Black Pepper
- 4 oz Chicken Breast (boneless,skinless)
- 2 tbsp Light Sour Cream
Directions
trim chicken of all visible fat. cut into 1" cubes.
heat a heavy frying pan, sprayed with nonstick cooking spray, to medium heat.
add chicken, and black pepper, reduce heat to medium-low, and cook until heated through and no longer pink inside, 10-15 minutes.
heat beans in a saucepan on low heat until beans bubble for at least 5 minutes, stirring frequently.
meanwhile, chop onions, bell peppers finely, quarter the cherry tomatoes, and shred romaine lettuce (or lettuce of your choice)
once chicken and refried beans are heated, layer beans, chicken and remaining ingredients onto a large plate.
add salt and pepper to taste (optional)
